Today was a good day. I finally made a meal that tasted good! Parmesan Tilapia and Cucumbers. It was a fairly simple recipie. Can't remember where I found them.
Tilapia Parmesan Saute
4-6 Tilapia fillets1 Tbls. olive oil¼ cup grated Parmesan cheese2 Tbls. parsley flakes2 Tbls. butter1 Tbls. lemon juice1 tsp. garlic powderMix Parmesan cheese, garlic powder, parsley flakes; set aside. Heat a large saute pan and add olive oil, butter, and lemon. Saute fillets 2-3 minutes per side until white and flaky. Sprinkle cheese mixture on fillets and saute each side for another minute, then serve. Makes 4 servings.
Cilantro Cucumber Salad

Simple, spicy and delicious. Chunks of cucumber are splashed with lime juice and sprinkled with cilantro and chili powder. Makes a nice crudites with a dipping sauce, or the finishing touch for a pile of crisp greens.

Ingredients
2 cucumbers2 tablespoons fresh lime juice1 teaspoon chili powder0.25 teaspoon salt1 tablespoon chopped fresh cilantro
Directions

Peel cucumbers, slice lengthwise into quarters, and cut into 1 inch pieces; place in large bowl. Sprinkle with lime juice, chili powder, and salt; toss. Toss with cilantro. Refrigerate until chilled.

Mom went to the Dr.
I took Mom to a Wellness clinic that was recommended to me by Kris Vel. Her dad went there and had amazing results. I thought it might be a good idea to have them check her out . She has been walking pretty crooked and bent over since her hip operation and is only taking prescription medicines and no vitamins or any nutritional products. The results of that visit has given me some good information to help her in the future. She has some scoliosis and her hips are not even because of the new hip she received. We have a plan to put a lift in one of her shoes to even out her hips. Her neck and lower back need help because her bones could fuse together if left without treatment. She had a test ajustment yesterday and adjusted well. She is already walking better and standing straighter. We will be going to a patient class so we can be informed on how to support her therapy.

Just some thoughts
Right now I feel like I could devour so many books and concepts and ideas. I love learning new things. I am facinated by Astrology, Numerology, and any kind of positive information that makes my life happy and fulfilled. I grew up in the LDS church and learned some truths that are validated by so many other teachings in the world. It is facinating to me how these different fields can all come together into one great whole. I am especially drawn to nutrition, and recipies as well. Having my mother staying with me and I want to know more about aging and how I can help her. She has given me so much joy! I want to help make her life better and easier. She makes me laugh everyday. She is forgetting many things and is having trouble walking. She keeps talking about how she is doing her rounds with all her children and then she can leave. Now that I am 55 years old, I am feeling like I have another 55 years I could live. I have made many changes recently and feel more are on their way. I have always been interested in nutrition and hope to be as healthy as possible when I reach 100 years. I love to listen to talk radio as long as it isn't negative. I like to hear different points of view. I love languages and have been learing Japanese, Irish, and Italian through podcasts. When I learn about other cultures, it helps me understand people better. I am learning how wonderful people and their life stories can be.
Oma & Opa's home on the Market
Roelof has listed his parent's home on the Market with Coldwell Banker. We had a very successful Open House this weekend. It is looking really good now. With new carpet on the stairs, and the porch painted. Kris and Pete worked really hard on the yard and did an excellent job.
